Dangers of eating fried Irish potatoes

In Uganda, Irish potatoes are a staple food for Bakiga among other tribes in western Uganda. Irish potatoes contain a number of nutrients including protein, vitamin C, and carbohydrates.
Irish potatoes are usually boiled after peeling and are ready to serve after about 20 minutes of cooking.
In some cases the boiling is done with the peeling on but this way, fewer nutrients are lost. The cover of Irish potatoes contains proportion of nutrients in the cover skin into the potatoes.
Better still, though it would be frowned up on, eating the Irish potatoes along with the peelings offers a considerable amount of roughage.
Besides boiling Irish potatoes can be made into fries, however it should be noted that excessive intake of oils causes life-threatening disease for example obesity and it raises the risk of developing non-communicable diseases such as heart disease, cancer and kidney diseases.
